Chef Tiffany Thomas is classically-trained in the Escoffier brigade method. She learned under acclaimed celebrity chef Tory McPhail while at Commander's Palace in New Orleans for four years, and earned a much-coveted sous chef position. She went on to sous chef at other famous fine-dining kitchens before stepping into full leadership roles as an executive chef. Currently, Chef Tif is utilizing her experience as a chef and her degree in accounting as a food cost analyst for New Orleans' legendary Galatoire's.
Tiffany's cuisine stems from deep study of global cuisines. She began first by studying traditional French cuisine & technique, along with the bright flavors of the Creole cultures of New Orleans & the Caribbean. She further deepened her knowledge of Italian, Spanish, Mediterranean, and Latin cuisines while leading kitchens dedicated to these styles. As Culinary Director, she guided an excellent fine-dining kitchen with a great executive chef and staff, giving oversight, guidance, and an overall vision to constantly challenge and expand the dining experience.
